Easy vegetarian sausage rolls recipe

I made these vegetarian sausage rolls a few weeks ago at uni when I just randomly felt like cooking. Because I’m at uni, this is a very simple recipe which only has 3 ingredients, only 2 of them being essential! There are probably lots of other sausage roll recipes out there but I don’t have the time or space to make them from scratch and my sausages needed eating. I couldn’t find a simple recipe anywhere…so I’ve decided to create one!

I’ve been eating Quorn vegetarian sausage rolls for a couple of years now and haven’t gotten sick of them (which is a miracle really!), but it is always nice to have a backup choice. I was buying the pastry because I wanted to make a pie (which went horribly wrong, but we’ll ignore that…), I had leftover pastry and decided that sausage rolls would be perfect! I’ve been dipping my toes into the world of vegan food recently, and I think these vegetarian sausage rolls are vegan but it might depend on which pastry you use!

My top tips

  • Take out your sausages in the morning so they can defrost (otherwise, you won’t be able to mash them!)
  • Follow the instructions on your pastry packet (mine told me to take it out 15 minutes before use)
  • Once the sausage rolls have cooked and cooled down, store them in the fridge
  • They are definitely the best on the first day and so would be a great snack in a buffet

Vegetarian sausage rolls

Makes: 6 sausage rolls

Prep time: 15 minutes

Cooking time: 15 minutes (ish)

Ingredients

  • 1 packet of ready to roll puff pastry
  • 3 vegetarian sausages (I use Linda McCartney)
  • Milk as a wash

Method

Step 1: Preheat your oven to 160 degrees

Step 2: Line your baking tray – I use reusable baking sheets which aren’t essential for this recipe but they are more environmentally friendly and are much easier to use!

Step 3: Cut up the sausages and put them in a bowl, next mash them until they at the right consistency for you.

Step 4: Unravel the ready to roll pastry and cut about a third of it off. You don’t need all the pastry for this recipe, but don’t let it go to waste! You could make a pie, cheese swirls, Nutella swirls or even more sausage rolls.

Step 5: Cut the pastry in half and be prepared to get your hands dirty for the next step!

Step 6: Get some of the vegetarian sausage mixture, squish it together essentially into the shape of a sausage, and put it in the middle of the strip of pastry.

How to layout the inside of the sausage roll

Step 7: Next, put a small amount of milk into a bowl and use a fork to put some on one side of the pastry strip.

Step 8: Fold over the pastry, try to make the sausage part even throughout, and squish the edges of the pastry together until it is sealed. Sometimes I fold it over to stop it from leaking!

Step 9: Use a fork to make some marks on the edging

Step 10: Cut into sausage rolls, I got 6 out of the recipe but different people like different sizes so don’t be surprised if you get a different number to me πŸ™‚ After you’ve cut them, put them on the baking tray.

Step 11: Cook in the oven for 15 minutes or until they are light golden brown.

    Omg I want these! I love sausage rolls but I’ve never been able to find a good one that’s also vegetarian (except the one from Greggs) and I would love to make my own x

    I love sausage rolls, but I wasn’t fond of the meat-free mini ones I tried from Sainsbury’s, so I am really excited to try these! 🀩 Linda McCartney vegetarian sausages are delicious – it’s nice to know there is a new way to incorporate them into my food dishes. I’ve added roll puff pastry and Linda McCartney sausages to my shopping list.

    I think I’ll try my hand at Nutella Swirls as well with the pastry, so thank you for that suggestion! 😊 Your sausage rolls look amazing!

    These sound delicious! We always have Linda McCartney sausages in the freezer, so this is a must-try recipe for sure! I have only tried veggie sausage roll at work and wasn’t impressed, but these look amazing x
